AGRI 100 - Food Science

 Intro

Food Science is a multidisciplinary discipline that includes chemistry, biochemistry, nutrition, microbiology and engineering in order to provide us with the scientific expertise to solve the real problems associated with the food system's many facets. A knowledge of the chemistry of food products, such as proteins, carbohydrates, fats and water, and the reactions they encounter during processing and storage are the basis of the discipline.

Including drying, freezing, pasteurization, canning, irradiation, extrusion, to name only a few, a thorough understanding of processing and preservation methods is required. In addition to statistical quality control methods, the ability to perform analysis of food constituents has been established. It is also important to understand the microbiology and the safety aspects of food.




Food Science continues to be a relatively new and growing discipline, produced largely in response to social changes in North America and other parts of the developed world. Originally selling only primary products for final preparation at home, the food industry finds itself adapting to consumer demands for more refined, sophisticated and convenient products.


Scientific importance behind Food Science

Without highly trained scientists able to understand the complex chemistry/biochemistry of food systems and knowledge of the methods to maintain them, the demand for easy-to-prepare, convenience foods presents significant scientific and technical challenges that can not be met.




This increased society's dependence on ready-to-eat foods has led to greater accountability for consistency, protection and nutrition for processors. Scientific concepts and emerging technology are being applied to food production in order to ensure high quality and efficient goods, and the requisite body of knowledge has become a discipline called Food Science.

University does provide enough resources regarding modules that they are teaching but it is limited to a career prospect and even to dive deeper into the subject.
